Another option may be to drastically modify how weather works.

In real life, for example, it only (typically) rains for a few hours at a time.
That would work out to being like 3-5 minutes of rain/snow every 4-5 hours in minecraft.

Sweet! This is a great idea. I would be boring if it never snowed or rained, however the amount time it does rain on minecraft does seem rather high. It seems a good comprimise to me and I look forward to it being implemented.

The other problem I don't think has been mentioned is all the biome changes. It gets annoying when your grass color changes all the time and you get snow/ice unexpectedly.
