Where is the guide for which parts of the Bible are and are not supposed to be interpreted literally? :)
The guide is common sense. The beauty of the Bible is that as society changes, the meanings of the parables still apply.

I'm going to stop talking now, I'm starting to sound like an evangelist x__x

I'm upset. :(
There are cherubim and seraphim. In the Bible they are sometimes depicted as having wings in the books of Ezekiel and Isaiah mostly I think. Whether or not they all have wings, I don't know.

Simply put, God made the Law to show the Jews that they could never be good enough without him, so they had to make sacrifices(killing animals) for their sins. However, they would have to make many many sacrifices. These sacrifices were symbolic of Jesus dying on the cross, which was the final sacrifice. We no longer need to make sacrifices, or rest on Saturday, or have the Passover, because Christ fulfilled what was prophesied in the Old Testament, and became the final sacrifice for our sins.
(That was the very short version.)
