I have not ever needed a huge wheat farm, and at present I demolished mine. However I did manage to come up with a relatively good way that could potentially work for this new system (it does require a fair amount of resources though
Basically this system would be set up in large columns and operated by a switch/button. This way I could control how much would come out at one time, and it would all fall down the water column. A problem involved includes lots of resources used (pistons, redstone, a lot of space used).
Wheat farms would be built as in previous pictures, so water can flood it entirely. At the end, there is a channel where a stream runs perpendicular to the flood waters. As the wheat is pushed down, it falls into the stream, which ends and drops the wheat down to ground level. I worked out that if you operate each level at one time, there is no entity loss (it just takes a bit longer).
