Unless you ripped down a massive stadium (for example) to expand your cobble castle. That would be an issue.
Thanks for the information!

What if you take down a structure despite having no specific plans for building something else, but rather just want to restore the land to looking like wilderness (either for aesthetic appeal, or to open up spaces where new neighbors can move in)? Would this be acceptable, since the goal is not to loot the structure, or would it be unacceptable since the disassembly serves no particular purpose for your own build?

From earlier in the thread:
jeniansmom wrote:Ask a staff member to check for you?
Post a sign with the date you discovered it and wait 3 months from then? Or a sign with a date 3 months from when a staff member told you the realm disbanded?
Or could disbanded realms have a motd when you enter them that states the date of disband and the most recent owner?
Just late night thoughts.
Posting signs and manually keeping track of who lives there would be a straightforward (if inconvenient) option. Asking a staff member to check whether a realm had previously been owned, and if so when it disbanded, might also work if the realm in question isn't one you're very familiar with (at least, I would presume staff would be able to get at that information if you asked nicely). And of course the MOTD idea would be an ideal solution, but would require modifications to the server's code to implement.

Basically, it's this:

If you're making the area look better, then it's allowed.
If you're making the area look worse, then it's considered griefing.

Simple enough. I just wanted to make sure there weren't any more subtle points to be aware of. Thanks for the response!
