Something is definitely wrong. I have a i5-2500k and am just using the intergrated graphics (HD 3000). This is the result: (It's actually much better than this now, thanks to updated graphics drivers, and this was made several months ago)

Try updating java, and make sure that it's 64-bit.
Try updating your video card drivers.
Try forcing a lower rez for rendering.
Optifine?
make sure all of your mods are gone (heh)
It might also be running out of memory, make sure you have java allocated to use more than the default 500MB

The spikes of lag though sound like a cpu over-run. Does it ever throw an exception? My suspicion is that one of your drivers are out of date. The JVM should be fine and stable...it works for us. It's more than likely it's one of your native drivers messing things up. It might even be something as silly as the sound driver.
