With 20 players or so with villagers, I think there's enough competition to eventually drop the price down to it's wheat equivalent.
A villager will give you 1 emerald for a minimum of 18 wheat. So, you might base the price off of that. Villagers will also give you a maximum of 3 glowstone blocks for 1 emerald. So, the price of glowstone will drop somewhat too.

Other things they trade:
22-29 paper ---> 1 emerald
12-14 books ---> 1 emerald
36-63 rotten flesh ---> 1 emerald
12 emeralds ---> 1 diamond sword
7 emeralds ---> 1 diamond helmet
16-18 emeralds ---> 1 diamond chestplate
11-12 emeralds ---> 1 diamond leggings
7 emeralds ---> 1 diamond boots
7 emeralds ---> 1 diamond shovel
9-11 emeralds ---> 1 diamond pickaxe
9-11 emeralds ---> 1 diamond axe
7 emeralds ---> 1 diamond hoe
emeralds ---> chain mail armor pieces
emeralds ---> iron armor pieces, swords, and tools
14-21 white wool ---> 1 emerald
1 emerald ---> 2-4 bottle o' enchanting

Some people are concerned about keeping villagers and the rare items they give in the hands of very few. I'd much rather not keep it all so confined. Someone is BOUND to give a bunch of stuff out for low prices.

Let's just say Mojang didn't think when they put in those numbers. I'd say the wheat trade with villagers is the fairest of them all. Nobody will give 3 diamonds for 1 emerald. Nobody will give 8 gold for 1 emerald. Why would they when they can get a monster deal with the wheat?

maxxi it doesnt really work like that because one person may want 1k for it one person may want it foe 100cr both people dont know the true value so the prices will be all over the place i just want a square number we can start selling at and villagers have good and bad trades some want 8 diamodns for 7 melons some want 32 rotten flesh for 1 emerald some want 37 gold for 1 emerald its a confusing thing so you not guranteed a good deal so whats a price we can all agree on per emerald lets start the topiv at 400cr

Actually, it basically -always- works like that. Whenever new items are introduced, prices are all over the place at first, but within a day or so they've settled at whatever amount people on average are willing to pay.

Though in my opinion, I think individual emeralds will start out a few hundred cr and then drop to under 100 once the villager farming business is in full swing.

EDIT: Also, in response to the numbers all over the place in more recent posts, I've heard Mojang has tweaked the trade values a lot in the most recent snapshots and the pre-release, so it should be assumed that the amounts viillagers will trade for will be much more normalized.

For the prices i would say 80c or 30c a pieces because
1. You can get them pretty cheap by villagers but the people with the villagers may fluctuate the price.
2. They're rare, therefore your just paying for the name, rareness and look.
3. They don't have a very good use such as the diamond tools are the best.

As for me im going to sell them cheap as i did diamonds ( for 75c a piece ), but i most likely wont buy any for their few uses. This is my opion on it.
