With 20 players or so with villagers, I think there's enough competition to eventually drop the price down to it's wheat equivalent.
A villager will give you 1 emerald for a minimum of 18 wheat. So, you might base the price off of that. Villagers will also give you a maximum of 3 glowstone blocks for 1 emerald. So, the price of glowstone will drop somewhat too.
Other things they trade:
22-29 paper ---> 1 emerald
12-14 books ---> 1 emerald
36-63 rotten flesh ---> 1 emerald
12 emeralds ---> 1 diamond sword
7 emeralds ---> 1 diamond helmet
16-18 emeralds ---> 1 diamond chestplate
11-12 emeralds ---> 1 diamond leggings
7 emeralds ---> 1 diamond boots
7 emeralds ---> 1 diamond shovel
9-11 emeralds ---> 1 diamond pickaxe
9-11 emeralds ---> 1 diamond axe
7 emeralds ---> 1 diamond hoe
emeralds ---> chain mail armor pieces
emeralds ---> iron armor pieces, swords, and tools
14-21 white wool ---> 1 emerald
1 emerald ---> 2-4 bottle o' enchanting
Some people are concerned about keeping villagers and the rare items they give in the hands of very few. I'd much rather not keep it all so confined. Someone is BOUND to give a bunch of stuff out for low prices.
