Eyyyyy, so how in the world do I go from 1.7.2 to 1.6.4? I've got that new launcher thingy 1.3.1? Also, too make things interesting, I'm using OSX

In the launcher there are 2 options to get back to 1.6.4.
You can either hit 'Create New Profile' or 'Edit Profile', go to the drop box that says 'Most Recent Version' and click on the arrow. Select 1.6.4. Save changes, select that profile, and then hit Play. If you just hit Edit then later you will have to change it back in the same manner when wanting to play 1.7.2, so I suggest creating a new profile.
