Emeralds can be obtained two ways:
1. In the wilderness. This section of the map was created after the 1.3 update containing emeralds. So in the rest of the world, emeralds do not exist.
2. Trading with villagers.

This is the preferred method of getting emeralds. If you find an emerald ore, you better have a silk touch with you. The ore is worth a ton more in the form of the ore instead of emeralds.
