I'll be honest. I'm not playing anymore because Minecraft just isn't that appealing to me anymore. The fact that the number of kids under the age of 12 playing this game has absolutely skyrocketed has lost my interest due to it being labeled as practically a child's game now. Minecraft is a great game but I just don't find any appeal in it anymore.

I agree, although there are like always, multiple ways to look at it. you could, (and you are), looking at it one way. "it's a child's game", is my TL;DR summary of your post.
for most of us, it's just another video game. however for some of us, it involves semi-complex java coding. those people can hardy look at it as a child's game.
I know for me, it's a puzzle, with lots of different options. you can create, destroy, and kill. I usually create. (although I know someone, *coughlegitneymarcough* who does all three extremely well )
but again, I can also understand your point

Then I suppose Call of Duty and Halo are childrens games as well, due to the massive number of people around 12 that play them.
