After reading about "tearing" I think I have found what the problem is. The refresh rate of the monitor I was using was only 50hz.

Well, running a GTX 680 on a 50hz monitor, is that the problem?
You'd probably be okay if you set your Minecraft FPS limit to "vsync" which will prevent tearing. The downside is, your max FPS would be 50fps since it would by synced with the 50Hz of your monitor.

Any frame rate above 24-30 is redundant, as it refreshes faster than the eye 'sees'.

Read up a little on tearing and you'll understand what you said isn't strictly true. As I understand, the tearing is caused by two slightly different frames merging with each other and being displayed at the same time.
