Mine is as good a PvP Sword I can get in the first slot, preferably Sharpness IV or V with Fire Aspect and no knockback. 2nd slot has as max-enchanted a bow as possible. Third through eighth contain various potions: Extended Regen, Ext. Fire Res, Ext. Strength, Ext. Speed, Splash Healing, and Splash Poison II/Splash Damage II. I keep three of each of these, lined up in columns. In my ninth slot, I keep the best food I can get. I prefer steak or cooked pork, but baked potatoes will do in a pinch. If I can't get those, I make pumpkin pie. In addition, I keep an iron pick (in case I get stuck somewhere) and, of course, arrows. My armour? Diamond Prot III or better, preferably with Feather Falling IV on the boots. Respiration and Aqua Affinity are nice too, but rather pointless in PvP. Other than that, I prefer to minimize the things I keep in my inventory, so I can hold any loot I manage to get my hands on 
I also keep extra potions of all sorts, as well as some food, in my Ender Chest. This is quite helpful, as I'm usually PvPing at either Spawn or Nether Spawn. Again, I like to keep it as empty as possible except for necessities, so I can use it to store loot.
TL;DR: I KEEP LOTSA GOOD STUFF IN MAH PVP INVENTORY, NUBS.
