so, as we have seen with glowstone, obscenely rare blocks tend to become obscenely valuable, so, what do you think people (or you) would be willing to trade for emerald ore.
Emerald ore facts:
1. it can only be obtained with a silk touch pickaxe.
2. in a given world, there are about 40 blocks of diamond ore for every block of emerald ore.
3. it seems to be more common or possibly exclusively exist under certain biomes: extreme hills and jungles. it may exist in other biomes as well, but is shown to not exist under desert or ocean.
4. there is no way to produce it, it is an ore, you cannot trade for it, it is also a place-able solid block.
my instinct is that it might be worth a couple thousand credits per block

Depends on its uses really, diamonds have a very high price due to their uses, remove diamond tools/armor, and their value wouldn't be the same. If they're only use is to trade them to villagers in exchange for junk, then they won't have much use, thus lowering the price alot.
I'd be assuming ~1000 RC for a single block, if it really is 40 times rarer then diamonds(since it would only be used for its looks).

I hope they make it more common and add other ores and stone types too...
Like in Tekkit...
I really want some fossils, tin, limestone, marble, etc. etc.

I'm pretty sure that you can get glowstone from villagers, so I would guess it would be worth a lot. Just my opinion though.
Getting glowstone from villagers will be useful for the first week, until they're all massacred and wiped out within the week, at most.

Can't villagers respawn over time if their houses are still intact?

Well I think the value of emeralds will get really really low.
See, you can get emeralds form villagers. Here is a video to show some of the things villagers accept in exchange for emeralds:
Here is a list of things that you could give a villager and he would give you back 1 emerald:
16 meat
22 coal
9 gold ingots
9 iron ingots
20 wool
21 wheat
14 books
26 paper
51 rotten flesh
2 eye of ender
So basically if you can farm any of the things in the list, you can farm emeralds. As of the current pre release.
Last I checked, you can't give emeralds and get things like iron/ gold/ diamond, but you can get iron/ diamond tools weapons and armor.
Also, you can get chain mail from the blacksmith villager!
Ofc this is all just a pre release. The trade values might change.

I don't think they can on SMP, but I'd have to check that before I was sure.
